is it possible that each guest have the option of choosing b&w or color for each session?

if so, how to i show on the monitor that they can choose? do i need a touch screen?

You can use an external button to toggle between B&W and color (e.g. by using a StealthSwitch 3 and programming the button to send Ctrl+W) or you can use a touchscreen. Please see this page for more info on input options:
