Is it possible to setup a touch screen to give the users a 3rd option of Sepia?

Yes, there is a "Select B&W (toning)" touchscreen option. This will select B&W with a user definable color tint which can be adjusted by using Ctrl+cursor left/right for the hue and Ctrl+cursor up/down for the saturation. Is this only for DSLR pro or PS remote too?

It's available for DSLR Remote Pro for Windows, PSRemote, NKRemote and Webcam Photobooth.

can this also be accomplished with the button utility software?

I do not see a bw toning option in the drop down list?

Sorry, it isn't available using the photobooth button utility and arcade buttons interfaced using a serial port. I recommend using the StealthSwitch 2 or 3 method of interfacing arcade buttons as this is more reliable, can make use of any of the keyboard shortcuts and can be modified using AutoHotKey scripts if necessary.
